A Castelnaudary, tout a l’air si simple, le bl\u00e9 est en herbe, on est bien dans l’herbe, \u00e0 d\u00e9jeuner, sur le sol, les herbes poussent, c’est presque la nature \u00e0 l’int\u00e9rieur des palissades du chantier, c’est une vraie friche; on mange les mots, les photos sont trop lourdes pour en parler. Il y a le grain de la terre, les herbes sauvages qui poussent. Le chantier en jach\u00e8re les herbes poussent les petits h\u00f4tels minables disparaissent les friches apparaissent les grues tardent le chantier est en retard, le retard r\u00e9clame le chantier, chantier= retard, il se fait tard, on aime le chantier en retard, on tarde \u00e0 terminer le chantier, le chantier n’est pas terminable, on d\u00e9jeune dans l’herbe avec du saucisson et des baguettes, on frise le d\u00e9lire, c’est mieux qu’un h\u00f4tel. On a envie de se marier, \u00e7a commence \u00e0 faire tard pour mettre la bague au doigt et faire la belle photo des noces. Va falloir reprendre le travail, on saucissonne le travail. On se demande s’il en manque pas un bout. <\/span><\/span><\/p>\n

A Castelnaudary, j’ai d\u00e9cid\u00e9 de r\u00e9sister et de d\u00e9fendre le boeuf contre le cochon.<\/em><\/span><\/span><\/p>\n

Je pr\u00e9f\u00e8re le boeuf au cochon. Le saucisson est tr\u00e8s sal\u00e9 sal\u00e9. Le boeuf sal\u00e9 est meilleur encore. Le cochon est tr\u00e8s sale, le boeuf est tr\u00e8s sal\u00e9. La vache est propre, blanche, immacul\u00e9e. Le veau est d\u00e9licat et fr\u00eale. Le cochon se complait dans sa crasse. Dans le cochon on mange tout, les tripes, le nez, la queue en tire-bouchon et m\u00eame les yeux. Les oreilles se mastiquent, le nez est d\u00e9j\u00e0 pr\u00e9d\u00e9coup\u00e9: il n’a pas d’arr\u00eate ni de pointe, contrairement au poisson. Le boeuf est tendre, il se mange par tranches ou par blocs. Le steak hach\u00e9 est d’abord coup\u00e9 puis hach\u00e9.<\/span><\/span><\/p>\n

Tranche, rond de tranche, entrec\u00f4te, cote. Hampe, onglet, bavette d’aloyau. Filet, faux-filet, rumsteck, aiguillette, g\u00eete, jumeau, plat de c\u00f4tes, tendron, rond de g\u00eete, paleron, macreuse, sacr\u00e9e poitrine\u00a0!<\/span><\/span><\/p>\n

Le boeuf m’habite et m’abrite dans son g\u00eete tendre o\u00f9 il m’offre poitrine g\u00e9n\u00e9reuse et jumelage amical. Nous sommes des fr\u00e8res avec le boeuf. Nous d\u00e9testons le saucisson et ses affres impures. Nous aimons le rouge. Je me demande si je ne prendrais pas un petit morceau de chorizo ? <\/span><\/span><\/p>\n
